in the summer, homemade juice popsicles!

And I know it sounds weird, but I *love* Dickson's pure fruit spread in raspberry. I eat it strait out of the jar. It's not to sweet. It's also great on top of soy ice cream.

Vegan Chocolate Mousse Pie

Crust Ingredients:
2/3 Package of Vegan Chocolate Cookies w/ filling removed
6 Tbsp. Vegan Margarine (Melted)

In a blender crush cookies till finely ground. In a bowl stir together vegan butter & crumbs til well coated. Press into Pie Pan or Tart Pan. Chill for 30 minutes.

Pie Ingredients:
16 oz (1 pack + 4 Tbsp) of Mori-Nu Silken Tofu Soft
4 Tbsp. Powdered Sugar
4 - 3.2 oz. bars of Chocolove Organic 61% Dark Chocolate
**(or 12 oz. of Dark or Semi-sweet Vegan Chocolate)
2 tsp. Pure Vanilla Extract

Drain Tofu; Puree in blender until smooth. Pour into a mixing bowl, blend in vanilla & powdered sugar. Break chocolate bars into squares (remove 4 squares & set aside). Melt remaining chocolate squares on MED-HIGH (50%) for 1-3 minutes, stirring occasionally until smooth. Add melted chocolate to tofu mixture immediately, blend until smooth. Scrape filling into chocolate pie crust. Drizzle pie w/ remaining chocolate. Chill for 1 hour.

If you double most of the recipes and add an extra half-cup/cup of flour, you can upgrade them into a 9" cake.

I really like the s'mores cupcakes/cakes and the carrot cupcakes/cakes.

I made a wheat cake with strawberry frosting for a dinner party over the weekend, which came out OK, I guess. The vanilla frosting recipe (which I just added a buttload of food-processored strawberries to) isn't my favorite; it uses the Earth Balance shortening, which makes it taste kinda ... oily? Anyone have a nice fluffy vanilla frosting recipe?

cupcakes are wonderbarr, decorative and always taste good, but my mom is a baker, my house is full of them, and im suffering a kind of cupcake overkill.

this may not qualify, as it is in its natural state, but you really cant beat a nice mango:)

failing that, some kind of steamed pudding..
